1. Vitamin K is the name given to a particular group of vitamins. They are found mainly in leafy green vegetables such as spinach, broccoli and cabbage. Vitamin K1 has the chemical name phylloquinone. It structure is shown below.

State and explain whether vitamin K1 will be fat-soluble or water-soluble.

2. Find out what you can about vitamin B12. You should state a good source of vitamin B12, what essential mineral element it contains, what its function in the body is and what disease is caused by a lack or deficiency of vitamin B12.

3. (a) Complete the following table listing the deficiency caused by lack of the following vitamins.

(b) Explain why using sunblock to protect against skin cancer can cause a deficiency in vitamin D.
